# Lipids: Built by Condensation but Not Polymers

Triglycerides and phospholipids form by condensation yet have no repeating monomer, so they sit outside the polymer rule. The phospholipid has one end attracted to water and one repelled, which is what later builds a membrane.

## Lesson: The lipid that breaks the polymer rule

A triglyceride forms when glycerol grabs three fatty acids, and each join releases one water by condensation. That is three waters per triglyceride. Yet it is not called a polymer, because its three fatty acids are not a repeating chain of matching pieces. Think of three tails pinned to one small hub, more like a three pronged fork than beads on a string.

Phospholipids look like triglycerides with one tail swapped for a phosphate head, and that swap changes everything. The head loves water while the two tails hate it. In water these molecules line up tail to tail into double sheets with heads facing out, and that sheet is the cell membrane. Triglycerides cannot do this, so they clump into fat droplets instead.

**Example.** Lipids also win the energy contest. Fatty acid tails are long runs of carbon hydrogen bonds, which release plenty of energy when broken apart with oxygen. Sugars already carry much of their carbon part joined to oxygen, so less remains to release. That is why bodies stash spare fuel as fat: a gram of lipid holds roughly twice the usable energy of a gram of carbohydrate.

**Tip.** Same glue, different architecture: that sentence answers half the exam traps. Condensation builds both polymers and triglycerides, so built by condensation never proves polymer. When a question asks why a triglyceride is excluded, point at the hub with three tails, not at the chemistry that joined them.
